Ingredients where possible from her organic farm


Childhood memories of good food...Kate remembers watching her grandmother chopping the fruit and weighting the sugar. Bustling around in her cheerful red apron, in her country kitchen, with plums freshly picked from her own garden, the sparkling jars waiting to be filled. Kate remembers hanging around smelling the sweet aroma of the juicy plums. She would stir and Kate would watch. "Never cook too much at a time," her grandmother would tell her. "Because each jar has to be perfect. The fruit is the queen of the jar. You must see and taste the fruit!"

 

When Kate grew up she used her grandmother's recipe. How simple the ingredients for jam are, nothing but fruit and sugar. Kate cooks small batches, because each just must be perfect. With children of her own she became concerned by the long list of unrecognisable ingredients on labels. So handmade and homemade became her aim in all areas of her family's food. Her children loved her jams so she began to experiment with different fruits and wonderful combinations. 

 

So, Kate has always made jam and can't imagine buying it. She is proud that the jam represents her and her passion for handmade. She likes that she can use her own illustrations of fruit on the label and that she knows exactly what goes into each jar. Only fruit and sugar in small batches. Lovingly cooked in Sydney's Inner West: and every jar is as good as the one before. 

 

And now she has bought an organnic farm outside Sydney where she has started to grow the fruit for Lyrebird Jam. So she will really know her jams, from the tiny buds on new apricots and chillies to the bountiful harvests.
